Description
Callejuela Tintilla is a sweet dessert wine made from young vines of Tintilla de Rota planted in the Callejuela estate. The grape, already in the winery, is selected grain by grain to carry out a carbonic maceration in a stainless steel tank. When the fermentation begins to be tumultuous, 8% wine alcohol is added to thus have a slow fermentation that takes about three weeks to reach 15 degrees of alcohol. The wine is devatted and pressed, and ages for three months in steel tanks, and another six months in wood. The result is a sweet red wine with a cherry color and a high density. Fruit rules on the nose, and the palate is sweet, although it retains a certain tannins and great acidity, which makes it a fresh and not heavy wine.
