Description
El Oso y la Alemana Blanco is a white wine aged in Malvasia and Verdejo barrels produced by the Máquina & Tabla winery in Toro.
Máquina & Tabla is a family winery owned by Oriol Illa and Susana Pastor. Oriol is the winemaker. He has worked in emblematic wineries such as Clos Mogador, and currently advises Vinya l'Hereu, Heretat Montrubí, El Jelipins and Prieto Pariente. Susana is devoted to communication, and they undertook this project together in 2012.
The vineyards for the wine El Oso y la Alemana Blanco are between 80 and 85 years old and are planted free standing; i.e. the plants are a single individual and not a graft-pattern combination as they are in most vineyards. In addition, the El Oso y la Alemana Blanco vineyards are cultivated following the principles of biodynamics.
The grapes forEl Oso y la Alemana Blanco come from the area of Toro in Zamora, but the wines do not have the D.O. Toro because they are produced outside the denomination.
To vinify El Oso y la Alemana Blanco the harvest is done manually, the grapes are pressed gently and the must is fermented with the grape's own indigenous yeasts. Once the fermentation is finished, the wine is aged for 4 months in 500 litre French oak barrels. Very large barrels are used so that the contribution of wood from the barrel does not mask the wine’s aromas. A total of 12,000 bottles are produced.
El Oso y la Alemana Blanco is a white wine that shows that quality whites can also be produced on land traditionally used for reds. A different and unique wine.

Malvasia, Verdejo.
