José Pariente Sauvignon Blanc is a white wine produced in the OJ Rueda by Bodegas José Pariente. José Pariente Sauvignon Blanc is made from a single varietal grape variety, Sauvignon Blanc. O.D. Rueda is a name known for the Verdejo variety, but José Pariente demonstrates that one can also can make excellent wines from other varieties in this region.
The grapes for this white wine come from some of the first Sauvignon Blanc vineyards planted Rueda over 30 years ago, on a rocky soil poor in organic matter, magnesium and calcium, with limestone in the higher areas.
This results in a low yield but high quality grapes. The vineyards have a harsh continental climate, with very cold winters and hot dry summers. The contrast in temperature between day and night is very high, helping to maintain a great balance between sugar and acidity in the grapes.
The harvest is done manually and the grapes are transferred to the winery in small boxes of 20 kg. The preparation begins with stripping of the grape, followed by a cold maceration for about 10 hours.
After maceration, the grapes are pressed in a pneumatic press before fermentation. To extract the maximum aromas from this variety, José Pariente Sauvignon Blanc is kept on the lees until clarification and subsequent filtering.
